a table open to chefs from here and abroad, initiated by Antoine & Maxence in 2023, and taken over this year by Chef Javier Meneses in 2024.
Every summer, ANEMA becomes his creative space, where gastronomy becomes an art of living.
Inspired by the art residency model, ANEMA welcomes passionate chefs who share their art for a season.
A passionate chef
Léa Etchegoyhen is a chef driven by a distinct vision of cuisine: that of an approach anchored in the territory, respectful of producers and focused on creativity.
Daughter of the ocean, Léa grew up between the Île de Ré and the Basque Country before launching into cooking after training as an architect.
For six years, she has been honing her know-how in France and abroad, notably at Chéri Bibi (Biarritz), Grammes (Paris), and Nightshop (Brussels). Passionate about the land and its stories, she highlights meaningful products and promotes the work of market gardeners, artisans, fishermen and breeders.
A commitment to LOCAL & SEASONAL flavors
Léa Etchegoyhen draws her inspiration from fresh, committed, instinctive cuisine that is deeply rooted in her environment. Close to her producers, she holds three fish auctions a week and works directly with them, without intermediaries. Léa makes it a point of honor to select and promote local fish and meat. Wine lovers will not be disappointed! To accompany the festivities, the Context agency is curating a selection of French and local wines that are healthy, easy to digest, and distinguished by their vintage, sourced from committed winemakers.

Inspired by the model of artists' residences, ANEMA welcomes passionate chefs who will share their art for a season on the terrace of the Hôtel Saint-Julien in Biarritz. A table open to young chefs, initiated by Antoine & Maxence in 2023 and by Chef Javier Meneses in 2024.
Throughout the summer, you will be able to discover a cuisine that respects and enhances the quality of the ingredients used, while maintaining a certain authenticity. Anema invites you all summer long for friendly moments and a cuisine just waiting to be discovered.
THE ART OF MIXOLOGY
And what better way to enjoy this seasonal cuisine than on our flowered terrace? Marine, our Head Barmaid, is passionate about the art of mixology, offering a cocktail menu signed by Jérémy Lauilhé, Meilleur Ouvrier de France and renowned mixologist. To whet your appetite, they'll suggest you to sample one of the house's signature cocktails. You'll love relaxing, in the intimate setting of our terrace, with a refreshing drink whether after a long bike ride or a surfing session on the Basque coast.
