The beautiful story of ANEMA continues: a table open to chefs from here and abroad, initiated by Antoine & Maxence, and taken over this year by Chef Javier Meneses. Throughout the summer, ANEMA will become his creative space, where gastronomy becomes an art of living. Inspired by the art residency model, ANEMA welcomes passionate chefs who share their art for a season.
A passionate chef
From Italian & Chilean descents, it was in 2017 that Javier Meneses settled in Bayonne to pursue his rugby career where he played fo local clubs including the Aviron Bayonnais? In 2020, Javier launched his catering & private Chef business during the lockdown, where his passion for cooking became a real turning point.
Today at the helm of El Fogon restaurant in Angley, Javier focuses on local products, highlighting local producers and their know-how. His cuisine blends authenticity, passion and innovation: the promise of a unique culinary experience.

A commitment to LOCAL & SEASONAL flavors
Javier Meneses draws his inspiration from an instinctive, produce-driven approach to cooking. Very close to his producers, he holds three auctions a week and works directly with them, with no intermediaries. Javier makes it a point of honor to select and add value to fish, as well as meats such as lamb and pork, not forgetting the Kintoa ham (Local PDO).
A committed cuisine
Javier's cuisine is characterized by simplicity and the use of coals, offering strong, balanced flavors thanks to a variety of peppers. Javier's residency with Anema is also dedicated to committed, produce-friendly cooking.
Throughout the summer, you will be able to discover a cuisine that respects and enhances the quality of the ingredients used, while maintaining a certain authenticity. Anema invites you all summer long for friendly moments and a cuisine just waiting to be discovered.
THE ART OF MIXOLOGY
And what better way to enjoy this seasonal cuisine than on our flowered terrace? Marine, our Head Barmaid, is passionate about the art of mixology, offering a cocktail menu signed by Jérémy Lauilhé, Meilleur Ouvrier de France and renowned mixologist. To whet your appetite, they'll suggest you to sample one of the house's signature cocktails. You'll love relaxing, in the intimate setting of our terrace, with a refreshing drink whether after a long bike ride or a surfing session on the Basque coast.
