Léa Etchegoyen, born in the French Basque Country, brings an authentic and heartfelt approach to the kitchen. Her cuisine tells the story of the sea, land, and people.

After six years refining her skills at places like Chéri Bibi (Biarritz), Grammes (Paris), and Nightshop (Brussels), she returns to her roots to create a menu full of local flavors and meaningful ingredients.

Léa honors the work of artisans, farmers, fishers, and butchers, drawing inspiration from the vibrant local markets and covered food halls (halles) of the region.
