A CHEF ROOTED IN THE REGION
Léa Etchegoyen, born in the French Basque Country, brings an authentic and heartfelt approach to the kitchen. Her cuisine tells the story of the sea, land, and people.
After six years refining her skills at places like Chéri Bibi (Biarritz), Grammes (Paris), and Nightshop (Brussels), she returns to her roots to create a menu full of local flavors and meaningful ingredients.
Léa honors the work of artisans, farmers, fishers, and butchers, drawing inspiration from the vibrant local markets and covered food halls (halles) of the region.
LOCAL AND COMMITTED CUISINE
Each plate crafted by Léa is a note of flavor and elegance, part of a simple, seasonal, and ingredient-driven menu. Her dishes celebrate the richness of local cuisine, highlighting the best of: seafood from the Basque coast, sustainably sourced meat, wild herbs and seasonal vegetables, local specialties and traditional dishesHer cuisine is fresh, creative, and free of unnecessary complexity, with ingredients sourced from three weekly fish markets and trusted local producers.
The restaurant’s wine list, designed by the agency Context, features natural French wines—balanced and expressive, selected to complement the food and enhance the overall culinary experience.
