With its third edition, ANEMA now settles into a long-term culinary journey. The culinary residence of Hôtel Saint-Julien, located in the heart of Biarritz, continues throughout 2026, offering food lovers a sustainable gourmet experience, well beyond the summer season. From December 4th until the end of the All Saints’ holidays in October 2026, ANEMA celebrates seasonal, market-driven cuisine, rooted in local ingredients, natural rhythms and the creativity of emerging chefs from the French culinary scene.
At the helm, Chef Léa Etchegoyen, already acclaimed during the summer season, continues the adventure with a generous and instinctive culinary signature. Surrounded by her all-female brigade, she develops a cuisine deeply anchored in the Basque Country. Nestled within our 3-star hotel, this restaurant in Biarritz offers a refined yet warm atmosphere, blending pleasure, art de vivre and ocean spirit, just steps from the coast.

A GOURMET AND INSPIRED ADVENTURe
The beautiful story of ANEMA continues and grows over time. Designed as an open table for chefs from France and abroad, the project was initiated by Antoine & Maxence in 2023, followed by Javier Meneses in 2024, before reaching a new dimension from 2025 onwards. Today, ANEMA stands as a restaurant residency rooted in creativity, sharing and excellence.
ANEMA has become a place of life and culinary creativity, where gastronomy is expressed freely in a friendly and generous atmosphere. It offers a true culinary experience, inviting guests to enjoy their culinary adventure through tasty dishes, inspired by the sea and the land. A fine dining experience to share with friends or family, set in an exceptional setting in a beautiful coastal town in France, at the heart of the Basque Country.
Inspired by the model of artist residencies, ANEMA welcomes committed chefs, invited to express their vision through authentic recipes. Each menu highlights essential ingredients, local produce, and the richness of the region, with a particular focus on fish and fresh seafood, celebrating the flavors of the Basque coast and offering guests a refined yet accessible gourmet experience.
Léa Etchegoyen, a chef rooted in the Basque terroir
Leading Season III of ANEMA, Léa Etchegoyen embodies a cuisine deeply connected to her territory.
A daughter of the sea, she grew up between Île de Ré and the Basque Coast, before turning to culinary arts after an initial career in architecture. Her sensitive and committed approach gives rise to a terroir-driven cuisine, telling the story of the sea, the land and the people.
Her career has taken her to renowned restaurants in France and abroad, including Chéri Bibi (Biarritz), Grammes (Paris) and Nightshop (Brussels).
Today, she returns to her roots to offer a creative, responsible cuisine, with local specialities celebrating the work of fishermen, farmers, artisans and breeders, and reimagining the art of the table in tribute to her origins.
A local, fresh and sea-inspired cuisine
At ANEMA, every dish is designed as a moment of pleasure, a delicate and authentic culinary experience inviting guests to savor the taste of the sea. Léa Etchegoyen’s cuisine, rooted in traditional Basque and French cuisine, highlights local cuisine and local specialties, using fresh, seasonal products sourced from three weekly fish markets and close partnerships with local producers.
The dinner menu features pure, sea-inspired dishes, where flavor always comes first: fish and seafood from the Basque coast, shellfish specialties, local meats, wild herbs, refined starters, and signature dishes inspired by traditional Basque dishes. Desserts include French pastries and the iconic Basque cake, a true regional specialty.

The restaurant is open at night and features a summer terrace, perfect for enjoying traditional cuisine, generous and sincere, in a warm and friendly atmosphere overlooking the ocean.

The wine selection is curated by Context Agency, offering a refined choice of French and local red and white wines, sourced from committed winemakers. Healthy, easy-to-digest wines designed to perfectly complement a traditional Basque terroir.
THE SAINT-JULIEN COCKTAIL BAR
To fully enjoy this seasonal cuisine, there is nothing better than our magnificent terrace, lush and flower-filled. A true extension of the cocktail bar, it offers a peaceful and special setting, ideal for relaxing after a bike ride or a surf session on the Basque Coast, while overlooking the ocean.
Marine, our Head Bartender, practices the art of mixology with passion and presents a signature cocktail menu created by Jérémy Lauilhé, Meilleur Ouvrier de France and renowned mixologist. To awaken your appetite, enjoy one of the house cocktails, served with a selection of tapas to share, for a truly special and memorable experience.

At Hôtel Saint-Julien, daily breakfast is an invitation to slow down and enjoy the moment, with a coffee or a generous classic formula. Served in a bright and welcoming room, it highlights fresh pastries, scrambled eggs, homemade granola, and freshly pressed juices.
According to your wishes, breakfast can also be enjoyed as a daily brunch, extending the pleasure in a relaxed and friendly atmosphere, true to the spirit of the house.
